Watermelon Salad w/ Chickpeas, Feta & Mint for #WorldMilkDay

This quick and easy salad is perfect for summer barbeques. The combination of sweet watermelon, salty feta, tart balsamic vinegar and savoury mint gets all of your taste buds firing at the same time. For a fun and kid-friendly presentation, you can also thread these ingredients onto toothpicks or wooden skewers.

Serves 6

Ingredients:
4 cups seedless watermelon, removed from rind, cut into 1inch cubes
1 oz crumbled feta cheese
14 oz can no-salt-added chickpeas, drained and rinsed
¼ tsp ground black pepper
¼ cup extra virgin olive oil
1 tbsp balsamic vinegar
3 tbsp fresh mint leaves, finely chopped

Method:
1. Arrange watermelon cubes on a large platter.
2. In a medium-sized bowl, add feta cheese and chickpeas. Stir.
3. In a small bowl, add pepper, oil and vinegar. Whisk to blend.
4. Pour dressing over feta cheese-chickpea mixture and toss to coat.
5. Spoon mixture on top of watermelon cubes.
6. Garnish with mint.

Prep tip: For best results, serve this salad immediately after you prepare it.
