Tangy Tofu Spread

tofu spreadThis Tangy Tofu Spread spreads easily whether it’s in a pita or in a celery cavity and it’s luscious texture makes you want to go back for seconds! A great way to use up a piece of leftover tofu. Tahini is very high in calcium and flavours the dip with a Middle Eastern tang that is always pleasurable.

This tofu spread uses good-tasting nutritional yeast. It is creamy and has a bright yellow colour that will enliven anything it is added to. Containing all the B vitamins it is a nutritional powerhouse with a most satisfying taste. It will also thicken and add a lot of flavour, especially to dips. Use it in place of breadcrumbs or wheat germ. Dairy-free, gluten-free, it is tolerated by many. For more on nutritional yeasts, have a look at my article on the subject.

Prep Time: 10 Minutes
Makes: 2 cups

Ingredients

2 cups firm tofu (approx 1lb/500g), rinsed
½ cup lemon juice
½ cup good-tasting nutritional yeast
½ cup tahini
¼ cup tamari
¼ cup chopped fresh basil
2 cloves garlic, minced
1 pkg (10oz/300g) fresh spinach washed, steamed, and well drained

Method

1. In food processor fitted with metal blade, process tofu, lemon juice, yeast, tahini, tamari, basil, and spinach until smooth.
