This flavourful Japanese-inspired Crispy Nori Walnut Snack is very easy to prepare. Nori is a sea vegetable that has been dried and pressed into sheets. It is most commonly used to wrap rice or as the exterior of sushi rolls.
MAKES 4 CUPS (1 L)
Ingredients:
½ cup (125 mL) walnuts
3 cups (750 mL) crispy brown rice cereal
5 sheets nori, sliced into small, thin slivers (see Recipe Note)
2 Tbsp (30 mL) white miso
1 tsp (5 mL) toasted sesame oil
1 Tbsp (15 mL) agave nectar
2 tsp (10 mL) wasabi powder
½ tsp (2 mL) sea salt
¼ cup (60 mL) olive oil
Method:
- Preheat the oven to 350⁰F (180⁰C).
- Arrange the walnuts in one layer on a parchment paper–lined, rimmed baking sheet. Toast in the oven for 5 minutes.
- Transfer to a large bowl and cool for a few minutes. Add the cereal and nori. Toss well.
- In a mini food processor or blender, combine the miso, sesame oil, agave nectar, wasabi powder and salt. Add the oil and process until smooth.
- Pour overtop the walnut-cereal-nori mixture. Toss to coat evenly.
- Arrange the mixture in one layer on the baking sheet. Bake for 15 minutes, stirring 3 times, until browned.
- Transfer to a bowl and serve.
RECIPE NOTE
Available in packages of 10 or 50, nori will last a long time in its protective wrap, especially if you keep it dry. Store in an airtight package or container.
