Every natural foods pantry should have a few cans of black beans ready for use. I serve this fast, easy and delicious Broccoli Black Bean Salad with many main courses. It’s also a great addition to any picnic and to take camping.

Makes: 6 servings
Ingredients
3 cups blanched broccoli florets
1 zucchini, sliced
1 sweet red pepper, diced
1 small red onion, diced
1-14oz can black beans, drained and rinsed
3 tbsp olive oil
3 tbsp balsamic vinegar
1 tbsp Dijon mustard
1 tbsp chopped fresh dill
½ tsp salt
Pinch freshly ground black pepper
Method
- In large bowl, mix together broccoli, zucchini, red pepper, red onion and beans.
- In small bowl, whisk together oil, vinegar, mustard, dill, salt and pepper.
- Pour over salad and toss to combine.
